Right-click on a seat and select Add Seat or Delete. If you add a seat it will be added clockwise from the selected seat.

To add/remove single seats from a rectangular or banquet table you can also double-click on the table and change it to a custom table. You can then separately control how many seats there are on each of the 4 sides.
